How’s it going? Hope the coffee is flowing! Today, I’m kicking off the first of three coffee reviews this week. That’s right—three days of coffee reviews in a row. Why, you ask? Because this week, we’re diving into a trio of coffees called the Foundations Series by One Village Coffee. In my French Press today I have their Daybreak Blend.

The Roaster

Based in Lansdale, Pennsylvania, One Village Coffee is a roaster dedicated to making a positive impact on coffee farmers, roasters, and drinkers. They achieve this by ensuring fair value for the farms they source from and by donating 1% of their sales to coffee-related environmental charities. They also happen to be one of my favorite coffee roasters.

The Foundations Series

The Foundations Series is one of three coffee collections created by One Village. Serving as their entry-level lineup, it’s designed to introduce coffee drinkers to sustainable, high-quality coffee at a fair price point. The series includes three coffees: Daybreak, Restore, and Embolden. Today’s focus is on Daybreak—the light roast offering.

If you’ve read my reviews, you know I love One Village’s light roasts like Villager and their Ethiopia Natural. So let’s find out if Daybreak lives up to the high standards they’ve already set.

One Village Daybreak Blend Review

Aroma and Body

When ground, Daybreak has a bright, fruity fragrance that’s semi-sweet with subtle notes of apple. This is complemented by a hint of cinnamon-like spice—it made me think of apple pie. Brewing the coffee enhanced these notes, bringing out even more fruitiness and spice

It is a relatively light-bodied coffee with minimal weight or mouthfeel.

Flavor Profile and Qualities

Daybreak starts with subtly fruity, sweet apple notes that aren’t overpowering, allowing a pleasant roastiness from the coffee to shine through. The sweetness fades toward the middle, giving way to a slight stone fruit–like pop of tartness. It’s a well-balanced and pleasant transition. The fruity notes then give way to a sweet, roasty finish with a subtle, caramel-like burnt sugar flavor. From start to finish this is a wonderfully smooth cup of coffee.

Overall Thoughts

This was a delicious and smooth cup of coffee. The apple notes are well-executed, offering a vibrant pop of flavor without overpowering the cup. The balance of bright, fruity acidity and a dark, sugary finish adds a satisfying level of complexity. Overall, I think Daybreak does an excellent job of fulfilling the Foundations Series’ goal: delivering a high-quality, craft coffee experience that any coffee drinker can appreciate.

You can purchase Daybreak from the One Village website individually or as a part of the Foundations Series bundle. Priced at $14 for a 12 oz bag (about $18.67 per pound) individually, or $40 for 36 oz (about $17.78 per pound) when bundled, Daybreak—and the other Foundations offerings—represent a fair price for premium, freshly roasted coffee.
